my summer squash, in my garden
My Father would be proud of my garden, the summer squash and the squash blossoms. Tonight I shall prepare a favorite meal, summer squash, fresh fish and some spinach. Slice summer squash and layer in a baking dish, drizzle some olive oil, sprinkle some parmesan cheese and bake til tender. Toss a pile of clean, fresh spinach in a dish with lemon, olive oil and garlic and you know it is ready when it starts to wilt. While that is baking, saute a fresh piece of fish, and serve. There is nothing better than enjoying the freshness of summer from one's own garden. A squeeze of fresh lemon or lime can add zest to a dish too. How is your garden growing?

I'm so excited about the little tomato seeds I planted in April. There are tomatoes now, on giant tomato plants, right in the middle of my flower garden!
Your recipe for dinner sounds perfect, and all seems to be blooming well in your world.
Squash blossoms... in a salad and sauteed in butter are delicious. What a nice, light summer dinner. My basil is growing wild. Pesto this winter!
oh that sounds delicious -wish I was there to partake! Also wish I had a garden -enjoy your summer harvest!
Since our recent move last year - we have been without a yard. I now rely on roadside stands and other gardeners charity to get the taste of homegrown.
Your blossoms are so pretty. My garden is just hanging on with all the rain we've been having.
Sounds wonderful, no garden here but heading to the States hope my sister's gardens are doing good.
good morning lovely pve!
what a wonderfully refreshing image to pop up this morning! i just get giddy about gathering produce from the garden to make a meal ... it's fun to make something and have the rule that it all has to be from the garden ... like the salad we had the other evening ... lettuce, young beet leaves, baby yellow and green zucchini, onion greens and bits of dill ...
i so can't wait for our squash to get a bit bigger to make the baked parmesan recipe ~ one of my faves!
i am most grateful for the miracle of a garden ~

This sounds good, what time did you say dinner would be served?
I actually spent the enture day in the garden yesterday. I am doing a post this afternoon.
Thanks for sharing,
Leslie
Sounds divine!!!
Sounds like a perfect Summer supper to me! Your squash blossoms are gorgeous. I would stuff them with ricotta and fry them up like they do in Rome - delicious!
Hi Patricia
That meal sounds absolutely divine! I'll be right over for dinner (I wish).
I have a tomoto plant in a pot on my kitchen terrace that has gone beserk, it is now 5' tall and still wanting to grow higher. It is one of the best growing seasons that we have had for awhile.
Patricia,
My tomato plants are gigantic. I cannot wait til I can have fresh picked tomato salads...yum- nothing better than the tastes of summer.

it sounds yummy!!!...
My garden consists of flowing baskets of geraniums with Ivy and draecena. Also Mandevillas galore that are vining all over the place, twirling and twining. I do not do garden veggies anymore. not enough space!
I planted squash seeds this spring and they were growing like crazy! When I transplanted them outside they went bye-bye. Now I have to buy my squash at the farmer's market. Thanks for the meal idea!
i'll be giving away zucchini soon, patricia. one little plant is going crazy. i've got a zucchini the size of my husband's foot just about ready to pick. he's a 13d. tons of tomatoes are green. salsa soon. lettuce is out of control.
great simple squash recipe. i'll have to try that. pam
Sounds delicious! Our garden is outpacing us...I need to stay on top of it.

Going to pick up some squash blossoms this weekend and try your lovely dinner. Thank you!
My garden is overflowing this year!

My mother in law makes a special pasta dish with just the blossoms. Don't throw those away!

Your summer dinner will be one of life's simple pleasures. Our "garden grows" in my husband's mind. It's one of his dreams, but we just haven't gotten that far yet at this house. Someday. . .
i am always in awe of people who has lush, beautiful & as far as yours, very productive gardens. these squash blossoms look delish!
I tried to talk my husband into fill in in the swimming pool so I could make a garden. He wasn't buying it. so for now I shop farmer's markets and wish I had one.
Your squash blossom recipe sounds wonderful.
I just stopped by from LittleByrd. Nice to meet you. Your work is stunning. I'll be back again soon to visit.
I only have a little herb garden, but tonight's menu makes me want one of my own so I can make such deliciousness.
I'm late for dinner, but is there any leftovers? This sounds tasty!! My garden is growing, but nothing is producing yet. Hmmm... xoxo
I'm glad to see your garden thriving! Ours is doing pretty well, though only the greens are ready to eat yet. We've been watching (watering) and waiting for the rest...
Thanks for asking. My pole beans are just setting some beans, I have had one small tomato, the zucchini is coming on, the raspberries are great, carrots and onions are growing, herbs are being picked. The sweet corn and cucumbers should be ready in another week.
Summer produce is coming on and we are eating off the land.
